Chicken Fried Rice

















Ingredients:
---------------------------
1.Cooked rice -4 cups
2.4Boneless cooked chicken finely chopped
3.Eggs-3
4.Green peas-1/2 cup
5.Finely chopped onion- 1
6.Finely chopped spring onion-8
7.Chopped garlic-3
8.Soy sauce-1tbsp
9.Oyster sauce-1tsp
10. Salt
11.Pepper powder-as rqd
12.Oil for stir-frying,as needed


Preparation:
-----------------------------
Beat eggs with salt and pepper to taste,make omelet ,then finely chop it to thin strips. Set aside
Stir-fry the onion,green peas,garlic on high heat for a few moments, remove and set aside.
Add oil, turn down the heat to medium and stir-fry the rice.
To this add the soy sauce, salt, pepper and oyster sauce.
Then add the chicken, onion and green peas and combine thoroughly.
Serve chicken fried rice with the strips of egg on top and the green onion as a garnish...........

Fish Molee


Ingredients:
----------------------
1. Boneless and skinless fish -10-12pcs
2. Fennel Seeds – 1/2 tsp
3. Cardamom – 2nos
4.Cinnamon – 2 pieces
5. Sliced Onion – 1 big
6. Chopped green chillies – 4
7. Chopped garlic – 4 cloves
8. Chopped ginger – 2 tsp
9. Curry leaves – few springs
10.Sliced tomatoes -1nos
11. Turmeric powder – 1/2 tsp
12. Pepper Powder – 1 tsp
13. Garam masala – 1 tsp
14. Red chilly powder – 1/2 tsp
15. Thin coconut milk – 2 Cups
16.Thick cocunut milk-1 cup
17. Vinegar – 1 tsp
18. Oil – 2 tbsp
19. Salt – to taste

For Marinade:
---------------------------
1. Turmeric Powder – 1/2 tsp
2. Black Pepper Powder – 1 tsp
3. Gingergarlic paste – 1 tsp each
4. Lemon Juice – 1/2 tsp
5. Salt – to taste

Preparation:
----------------------------
  • Marinate the fish and keep it aside for half an hour.
  • Shallow fry the fish lightly in oil and keep aside.
  • Add oil to another pan , add 2-4 ingredients to it and saute for a minute.
  • To this add 5-9 ingredients saute for a few minutes.
  • Add the chopped tomatoes and saute well until pulpy.
  • To this add 11-14 ingredients and stir for a minute.
  • Pour 2 cups of thin coconut milk along with some salt.
  • When the coconut milk is hot, add the lightly fried fish and cook on medium flame for 10-12 minutes till the gravy starts to thicken.
  • Finally, pour 1 cup of thick coconut milk and simmer for another 3-4min.
  • Sprinkle 1 tsp of vinegar,garnish with more curry leaves.

Uzhunnu vada & Chutney


Ingredients:
---------------------------
1.Black gram dal-2cups
2.Curry leaves-few springs
3.Chopped green chillies-3tsp
4.Finely chopped ginger-2tsp
5.Asofoetida powder-1/2tsp
6.Crushed pepper corn-1tsp
7.Salt to taste
8.Oil to fry







Preparation:

  • Soak black gram dal in water for 2 hours,drain off water from it and grind to a fine paste till it is creamy, but make sure it is not watery.
  • To this batter add, green chillies, ginger, asofoetida, curry leaves, pepper and salt and mix well.
  • Roll batter in to small balls and flatter in palm,make a small hole in the middle.
  • Heat oil in a deep frying pan and immerse the balls in it,when it turns golden brown, remove and drain oil.
  • Serve with coconut chutney..........

Chilli egg


Ingredients:
----------------------------
1.Hard boiled eggs- 4 nos
2.Chopped capsicum- 2 nos
3.chopped big onion- 4 nos
4.Finely chopped Ginger- 1tsp
5.Finely chopped garlic- 1tsp
6.Pepper powder-1tbsp
7.Soya sauce-1tsp
8.Tomato sauce-2tbsp
9.Salt-as rqd
10.Corn flour-3tbsp
11.Oil for frying








Preparation:
--------------------------
The hard boiled eggs are cut in to 4.
Make a batter by mixing corn flour,salt and 2tsp pepper powder.
Dip the egg pieces in the batter and deep fry in oil till the cover is crisp & brown.
Fry 2-5 ingredients in another pan,to this add 6-9 ingredients and let it boil for a while.
Turn off heat,add eggs and mix well till they are coated with the sauce completely.
Tastes good with Chinese fried rice or even with roti/ paratha.
Non egg eaters can use potatoes instead of eggs.

preparation:

Squeeze orange juice into a glass(You can extract more juice if you microwave the orange for about 10 sec) add water,sugar and mix it well,add ice cubes....

Chicken Biriyani
















Ingredients:

1.Chicken - 1kG
2.Basmati rice - 500g(washed and soaked for 30 min)
3.Big onion - 5 nos
4.Tomato-3 nos
5.Ginger garlic paste - 1tsp
6. Green chilly paste- 2tbsp
7.lemon juice-2 tsp8.Garam masala-1 tbsp
9.Salt- as reqd
10.cooking oil

For the marinade :
------------------------

• 1-1/2 tsp Red Chilli Powder
• 2 tsp Ginger paste
• 2 tsp Garlic paste
• 1 tsp Garam Masala Powder
• 1 tsp Turmeric Powder
• 1 cup Yoghurt
• Salt

For garnishing:
------------------------
• 1/2 gm Saffron (dissolved in 1/2 cup milk)
• 2 tbsp Rose Water
•Cashew nut and kismis as rqd
•Butter

  • Preparation:
    -------------------------------------------
  • Marinate the chicken and leave the mix for an hour.
  • Now boil water, add 1/2 of the whole garam masala, bay leaf, and rice , cook the rice until 3/4 th is done, drain and keep it aside.
  • Heat oil in a pan and add sliced onions and fry it till light golden brown and keep it aside.
  • To another hot pan add sliced tomato followed by garam masala,chilly paste,salt,ginger garlic paste,lemon juice, make it a smooth paste.
  • To this paste add marinated chicken and let it to cook.
  • To this add fried onion and mix well.
  • Place alternate layers of chicken and rice, sprinkle remaining garam masala powder , butter,cashew nut,kismis in between the layers and on the top, end it with saffron & rose water.
  • Cover and seal it with an aluminum foil,cook it further on low flame for 10-12 minutes.
  • Chicken biryani is ready to serve..........
